The Carotene and Kale Salad

  • 5oz kale
  • 1 thinly sliced carrot

You’ll need:

  • 3 cups of cooked quinoa
  • ½ cup of cherry tomatoes, unchopped
  • ½ cup of diced orange peppers
  • ¼ cup of diced red onion
  • ¼ cup of pumpkin seeds
  • 1 minced clove of garlic
  • ½ cup of black beans
  • ½ cup of pitted kalamata olives
  • ¼ cup of chopped fresh parsley

Watermelon Hydration Salad

  • 10 cups of cubed watermelon
  • 1 cup of fresh minced mint leaves
  • 1 cup of sliced radishes
  • 2 tablespoons of lime juice

  • ¼ teaspoon of salt
  • 4 cups of rocket

The Detoxifying Broccolini Salad

  • 2 bunches of sliced broccolini
  • 1 tablespoon of cooked quinoa
  • 1 tablespoon of chopped fresh tarragon

Dressing:

  • 1 tablespoon of lemon juice

  • 1 clove of minced garlic

  • 1 teaspoon of water

Steam the broccolini for around 5 minutes until tender then put in cold water, pat dry and toss with the other ingredients before adding the dressing.

The Avocado And Tomato Salad

Avocados are rich in vitamin E and polyphenols to nourish and protect the skin while tomatoes are packed with the carotenoid antioxidant lycopene, which protects the skin from the sun’s harmful rays.

You’ll need:

  • 2 cups of sliced cherry tomatoes
  • 1 cup of diced yellow peppers
  • ½ cup of diced red onion
  • 2 minced garlic cloves
  • 2 tablespoons of lemon juice
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of minced fresh coriander
  • 4 tablespoons of flax seeds
  • 2 diced avocados

Combine all of the ingredients except the avocado and toss well before lightly folding in the diced avocado. Serve straight away.
